Prep Cook II
Position Summary
The Prep Cook II is responsible for preparation of ingredients and menu items for all meal services. The Prep Cook II helps manage a rotating group of scholarship students who often have minimal kitchen experience. The ability to work in a fast paced environment and as a team member with all other functions of Penland is important aspects of this job. The capacity in the kitchen and dining room is 230 with daily averages of 230 in the summer and 130 in the spring and fall. The Prep Cook II reports to the Food Services Manager. This is a full-time, seasonal, hourly, benefits eligible position.
Primary Responsibilities
Works in collaboration with the kitchen staff to prepare ingredients and menu items for all meals, five days a week. The Prep Cook II is expected to encourage and support an environment that places value on creative embellishment and garnishing of food to promote an atmosphere that values presentation.
Food Prep: Prepares lunch items for the coffee shop, including slicing and portioning of meats and cheeses, making of meat salads, prepping vegetables and other items as directed.
Works in the coffee shop as needed.
Communicates clearly and regularly with the day and evening cooks.
Trains employees as needed in specific preparation details.
Equipment Maintenance: Works with the Food Services Manager and Coffee House Manager on the smooth working of all kitchen tools and equipment.
Assists in the maintaining orderly systems for storage and care of all tools and equipment.
Assists in orderly systems for food storage, future use and disposal.
Assists in training staff and work/study how to use equipment safely and properly.
Annual Benefit Auction: Assists in ensuring that adequate staffing is in place to plan and produce volunteer and staff meals during the auction week.
Coordinates meals with the person or core student leading the kitchen daily.
Health Code Standards: The Prep Cook II is expected to maintain the highest standards of cleanliness in the kitchen.
Keeps current on health code regulations.
Instructs employees in all areas of health code standards.
Manages and executes all daily, weekly & seasonal clean-up responsibilities.
Qualifications
To perform the job successfully an individual must be able to perform the responsibilities above satisfactorily. Culinary experience in a high volume setting with diverse menu selections is preferred but not required.
